Lamb's quarter quiche 


2 cups lambs quarter leaves
3 eggs
1.5 cups coconut milk (use 11/2 cups water plus 3T. coconut powder (Enerfood available from Power Hour
1/2 cup Hemp flour (from Power Hour)
1/2 cup Mozzarella cheese
1/2 cup melted butter
1/2 parmesan cheese (added after baking)
pepper, garlic, oregano, garlic, Himalayan salt (Power Hour) onion for taste

Mix eggs, coconut milk, hemp flour, Mozzarella cheese, and seasonings in blender
or hand mix. Pour in pie pan over the lamb's quarter which has had the leaves pulled off the stems.
Bake 35 minutes at 350 degrees. Remove from over and sprinkle Parmesan cheese over quiche, place in
broiler for a few minutes until brown.
